Well, Miss Heather. As you may have noticed, I got a little carried away with another tag this week, leaving not a whole lot of free time for cooking. Fortunately, I had a batch of farmer’s-market tomatoes (and peppers) on hand, plus some grass-fed ground beef and two ripe avocados. I went with the taco recipe your T created a while back—using two whole tomatoes—and whipped up some yummy guacamole using just a bit more tomato. Plus a little salsa and fresh tomatoes on the side.
Simple, but it hit the spot and we even had leftovers (not sure how!) so I could enjoy it again for lunch on Tuesday.
Mmmm. Wish I had some more right now!
