It happens so rarely around here. And, so, I celebrate.
What’s the occasion, you ask? I baked something! And if R-girl, my pastry connoisseur, came back for seconds, and thirds, and then had to be deterred from eating too many at once, I consider that a smashing success.
That and the fact that these muffins are packed with yummy good-for-my-kids things like flax, oat bran, carrots, and apples.
And rice flour. (So my almost-entirely-dairy-wheat-and-sugar-free self could eat them too!)
Best line of the weekend was: “You should make these more often, Mom!”
I just don’t hear that very often. (Not because I can’t bake; just because I don’t.) So pardon my reach while I give myself a sweet little pat on the back, thankyouverymuch.
