There’s something about great food in the light of morning that just tastes | so | satisfying.
Breakfast. Mmmmmm.
Our big *Wild West Summer Trip* included some pretty amazing breakfasts. Take a look…
In Portland, we followed a tip to this little breakfast nook a few blocks from our hotel.
Those are local marion berries you see on R-boy’s pancakes. As for me, I ordered my two eggs over-easy, with bacon and breakfast potatoes on the side. Classic and yum. I eat almost no wheat, dairy, or sugar-so most cakes and waffles don’t fly with me (but read on to see my delicious breakfast surprise…!).
Speaking of eggs.
Nothing compares to the over-easies I enjoyed in The Dalles, Oregon, courtesy of R-kids’ cousins and their pet chickens. They were so fresh and to be frank, very delicious. So delicious in fact, I’m even considering getting some chickens of my own when I return home. I asked them a few questions about how easy it is to rear chickens and I think I could handle it. I would probably get some pre-made chicken coops. And they eat pretty much anything so getting food wouldn’t be difficult at all. So it seems like a pretty good idea. I would love to have eggs this fresh every morning so it’s certainly something I’m considering.


Seriously, people. Where can I get a chicken?
And a peach tree?
Because the only thing worthy of joining those eggs on our plates were the peaches R-kids’ grandparents picked for us-three steps outside their back door.
Which reminds me, back in Portland we discovered another breakfast favorite a few steps outside our hotel. We stopped there the morning we left-as we dragged our six bags six blocks, headed to catch the light rail.
And that leads me to my very, very, very favorite breakfast of our trip.
Of the summer, actually.
Ok, of the year.
I’m not sure you can call this little Eugene, Oregon, restaurant a hidden gem.
Even though it’s in a strip mall.
Anyway, the two (obviously slightly wacky) brothers who started this waffle house are heroes in my book. They not only create authentic Liege waffles in highly unusual and crazy good combinations.
They also offer them in a gluten-free version!
So I could eat it!!
YAY!!!!!
I know, I know. My waffle probably contained more sugar than I usually have in a week, but it was imported Belgian pearled sugar so that doesn’t count, right?
Right.
So here’s the first waffle I’ve eaten in I can’t remember how long. It’s called the “Just Trust Us.”
I did trust them and wow am I glad I did. That waffle is topped with avocado, basil, strawberries, and nigella sativa (black seed), all of which was drizzled with extra virgin olive oil.
Speechless. And only $7.
My work here is done. I’m hungry.
